Dalla Nostra Cucina: Daniela Agostino-Cugini's Recipe for Broccoli Quinoa Casserole

Villa Express presents another great meal idea in Dalla Nostra Cucina, our ongoing series of recipes from Villa Charities staff members.

This week we feature a recipe for Broccoli Quinoa Casserole from the kitchen of Cultural Arts Administrator Daniela Agostino-Cugini. The recipe is quick, easy to make, and delicious!

Broccoli Quinoa Casserole

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Yield 8 servings
Healthy, cheesy comfort food without any of the guilt!

1 cup quinoa
1 head broccoli, cut into florets and finely chopped
2 tablespoon olive oil, divided
1/3 cup Panko*
3 boneless, skinless thin-sliced chicken breasts
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups 2% milk
1 1/2 cups shredded cheddar cheese, divided
1/3 cup Greek yogurt

Preheat oven to 350 degrees F. Lightly oil an 9x13 baking dish or coat with nonstick spray.

In a large saucepan of 2 cups water, cook quinoa according to package instructions. Within the last 5 minutes of cooking time, add broccoli on top and steam until cooked through.

Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add Panko and cook, stirring, until browned and toasted, about 3 minutes; set aside.

Heat remaining 1 tablespoon olive oil in the skillet. Season chicken breasts with salt and pepper, to taste. Add to skillet and cook, flipping once, until cooked through, about 3-4 minutes per side. Let cool before dicing into bite-size pieces; set aside.

Melt butter in the skillet over medium heat. Whisk in flour until lightly browned, about 1 minute.

Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 3-4 minutes. Stir in quinoa, broccoli, chicken, 1 cup cheese and Greek yogurt; season with salt and pepper to taste.

Spread broccoli mixture into the prepared baking dish; sprinkle with remaining 1/2 cup cheese.

Place into oven and bake until cheese has melted, about 5 minutes.

Serve immediately, sprinkled with Panko*, if desired.

*Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store.

Indian Summer Heat Cooking Class: a Taste of South Asia

Get ready to have those taste buds sizzle and your tongue tingle at the "Indian Summer Heat Demo Cooking Class" at Columbus Centre, on August 18. Only a few spots are still available!

Indian culinary favourites naan bread, butter chicken, basmati rice, spiced potatoes, and a sensational mango and pistachio kulfi will be featured.

"Taste of Tuscany" Cooking Class

Enjoy a night of good company and great food at Taste of Tuscany, an interactive cooking class offered at Columbus Centre on August 25 (new date!).

This multi-sensory dinner will provide edible, verbal and visual storytelling of the old world, highlighting Tuscany. Tuscany has a rich culinary heritage, with dishes that are simple to make!

Times: Demo classes are 6.30pm - 8.30pm. Interactive classes are 6.30pm - 9.30pm.

Prices: Demo Classes are $55 + HST/person. Interactive Classes are $65 + HST/person.
Book 2 classes in same month and save $5 (e.g. book both August classes)

Note: All dishes and wines stated above are examples and the Chef may choose other options. Each lesson includes a complete 3-course meal and beverage. Columbus Centre has the right to cancel classes due to low enrollment.


Day Camp Session Ends with Dance Recital, Art Exhibition and Kitchen Feast

The third session of Columbus Centre Summer Day Camps kicked off yesterday.

There are lots of great activities in store for the kids over the next two weeks - sports, art, cooking, dance, music, special outings and much more. You can still sign up your child for the current session.

Session 2, which ended Friday, finished with a mini dance recital, art exhibition and a kitchen feast!

Columbus Centre Summer Day Camps offer a wide variety of sports and specialty camp options for almost any kid aged four to 16 years old. The activities include Visual Arts & Crafts, Cartoon & Animation, Dance, Rock Band, Kitchen, Karate, Soccer and Ultimate Sports, plus combo camp packages.

VCLA Golf Tournament Raises $40,000 for Villa Colombo Toronto

The Villa Colombo Ladies' Auxiliary (VCLA) 26th Annual Golf Tournament was a great success, raising $40,000 for Villa Colombo Toronto. This year over 90 golfers took to the links at Carrying Place Golf & Country Club and another 30 people came for lunch.

Each year, the VCLA holds many social events and fundraisers to create awareness and raise funds for Villa Colombo Toronto. The annual golf tournament, held on May 27th, is the VCLA's biggest event of the year.

Each year the "new faces" become next year's "familiar faces". Everyone in attendance enjoyed a delicious meal provided by the Manor - Peter and Pauls. Nick Manocchio, Chair of Villa Colombo's Board of Governors, served as Master of Ceremonies.

The event would not be possible without our many sponsors and volunteers. A very special thanks goes to our lead sponsors, Scotiabank and Arvan Rehab Group, and the many "Scotiabankers" in attendance. Rita Rotundo, president of VCLA, along with the "Frances and Frances co-convenor team" (Frances Gratta and Frances Magliocchi), were instrumental in the organization and continued success of the event.

Congratulations to Luisa Dobilas who won a BBQ valued at $1,200, generously donated by Weber-Stephen Canada. Everyone in attendance went home with a golf shoe bag generously donated by Yamana Gold.

Impressionist Painting Workshop (August 15)

Students in the Impressionist Painting Workshop will learn the principles of visual expression and will develop observational skills, looking at the practical aspects of art-making and the more advanced concepts of shape, values and edges. Plenty of individual attention and guidance will be provided.

This is standalone class or, for students who took the Figurative Drawing Workshop, they will be able to build on the skills they learned in that class.
